Spicy Roasted Chicken




     If you enjoy hosting a party, you might appreciate this idea. This works great too, as a potluck dish, it only requires simple steps and ingredients. My mother came up with this idea and it became a huge party favorite! Little did they know, she was only responsible for 10 percent of the recipe. All thanks to supermarket's hot and ready rotisserie chicken. 

     In the United States, you can easily find a hot and ready rotisserie chicken in any of the local supermarkets, like Kroger, Ralph's, HEB, etc. (It is a fresh roasted chicken that is made ready to eat). The only place in Asia I know offers this type of ready meal is Cold Storage, located in Singapore. Basically, what you need is a hot and ready roasted chicken in "Lemon Pepper", or any herbs, marinated ones is fine too; and a few basic ingredients. Avoid getting ones with barbecue or any thick sauces, it could clash with the extra ingredients you are about to add later. 




Serves 4

Ingredients: 

1 lemon pepper roasted chicken (whole)
1/2 cup chili garlic sauce/ sambal oelek chili sauce
About 1/3 cup cooking oil
3 tbs sweet soy sauce

In a blender:
1 red onion. Cut small
1/2 tbs oil

Directions:

1. Roughly cut chicken into few pieces and set it in an oven proof  plate.
2. In a wok/pan, heat oil in medium high heat then add the blended red onion. Cook for 5-7 minutes or until slightly brown.
3. Add chili sauce. Cook for another 5 minutes then add sweet soy sauce. Stir for 2 minutes. Turn off the heat.
4. Pour sauce onto chicken evenly. Drizzle a little oil. Then, in a 350 F heated oven, bake it for 10-12 minutes.
