Tofu stir fry with Jalapeño





     I love that this recipe reminds me of good times and living a balanced healthy lifestyle. Back in 2012, I started this new diet of eating no meat a.k.a vegetarianism.
Unfortunately, after two years of not eating meat, I had my relapse; and it is hard for me to get back to it since then. However, I still love eating veggie dishes from my old diet. I just no longer have the same strength  I have before; giving up meat. Today's recipe was inspired by my former co-worker, back when I used to work at a Japanese restaurant.
     Some nights, he would make this awesome dish called Calamari Special for our regular customers. It was so famous, they constantly ask for it whenever they came; even though the dish was never listed on the restaurant's menu. So, one day I asked him if he could make me one without the calamari, and substitute it with tofu. Surprisingly, I'm happy to say that without the calamari, the recipe worked just fine and he was kind enough to give up the recipe to me. Shout out to you, Luis! 
     Originally, he would deep fry the calamari separately, then add it into the sauce. However, since tofu is much softer than that, instead of mixing it in a pan, I like to pour the sauce on top of  tofu . Therefore, the tofu will not get smashed from mixing. 

Serves 4

Ingredients:

1 pack of 19 oz. tofu. Cut squares 
1 1/2 tbs oil
1/4 white onions. Slice thin
1 jalapeno. Slice thin
2 tbs light soy sauce
1 tbs water
1 cup rice flour

Directions:

1. Coat tofu in seasoned rice flour, then fry. Once done, set it on a plate.
2. Heat up oil and add onions. Cook for 2 minutes then add jalapenos. Cook for 5 minutes or until onions transparent.
3. Add soy sauce. Stir for a minute then add water. Cook for another minute.
4. Turn off the heat and pour sauce on tofu.
5. Serve best with rice. Bon appetite!
