Boiled Eggs in Red Sauce/ Telur Sambal Balado


Introducing a special traditional home-cooked meal from Southeast Asia. My Mom's recipe may not be the original of Telur Sambal Balado, but it is quite close, if not better. Serves with rice and any sautéed or steamed vegetables, this dish would satisfy your crave.
Some of the ingredients needed such as; chili sauce, shrimp paste and bay leafs would require you to step into an Asian market nearby. However, I have seen these items in regular markets, particularly in their Asian food aisle, so you may want to check them out first. I've seen them in Kroger & HEB here in Houston, TX area.

Serve 2-3

Ingredients:

4 hard boiled eggs
1/4 cup cooking oil
2 tomatoes. Cut small
1/2 of big red onion
2 tbs SAMBAL OELEK chili sauce (You may find this in any Asian markets. Add more if you like it more spicy)
1 tsp shrimp paste (optional, as some people may find the fishy smell too disturbing)
2 bay leafs
1 tsp sugar

Directions:

1. Heat up cooking oil, then add the onions. Cook it till slightly brown then add chili sauce and shrimp paste. Cook for 2 minutes and add bay leafs. Stir for a minute then add in the tomatoes. This time takes longer to cook. I'd say about 15 minutes until the tomatoes cooked through. 
2. Once ready, add the eggs and mix it with sauce. Stir occasionally for one minute. 
3. Turn off heat and serve. Bon appetite!
