Another Mom's recipe you would love. This also works with other meat such as, pork and beef.
Serves 2-3
Ingredients:
1 lb boneless chicken thigh. Cut bite size
1/3 cup cooking oil
4 lime leaves. Make an incision on the center of the leaf for stronger aroma.
5 inches of lemongrass. Cut into 4 pieces, and give it a good smash for stronger aroma.
5 tbs SAMBAL OELEK chili sauce/ Chili Garlic Sauce (they are practically the same)
1 cup water
In a blender:
A small piece of ginger (about a size of your fingertip)
1 medium size red onion. Cut small
1 tbs lime juice
A pinch of salt
Directions:
2. Add lemongrass & lime leaves. Cook for 2 minutes then add chili sauce. Cook it for another 2 minutes then add the chickens. Stir for a minute.
3. Add water, stir and close the lid. Let it cook for about 25-30 minutes. Stir occasionally. Ready and serve. Bon appetite!
